Healthy Recipe:
Healthy Chewy Ginger Molasses Cookies
- 1 flax egg (1 TBSP flaxseed meal + 3 TBSP water; let sit for 5 minutes to thicken)
- 1/2 cup almond butter
- 1/3 cup coconut sugar
- 2 tablespoons molasses
- 1 teaspoon Simply Organic Vanilla Extract
- 1 teaspoon Simply Organic Ginger
- 1/4 teaspoon Simply Organic Allspice
- 1/4 teaspoon sea salt
- 1/4 teaspoon baking soda
- 3 tablespoons coconut flour
- Raw turbinado sugar for sprinkling optional
Preheat the oven to 350ºF. Line a baking sheet with parchment paper and set aside. In a mixing bowl, combine the flax egg, almond butter, coconut sugar, molasses and vanilla. Beat with an electric mixer until smooth. Add the spices, salt, baking soda and coconut flour and beat again until a sticky dough forms. Using a small cookie scoop, drop the dough onto the baking sheet, spacing the cookies at least 2” apart. Repeat until all the dough has been used. Gently flatten the cookies with your hands and sprinkle with sugar. Bake on the center rack for 11 minutes. Remove from the oven and allow the cookies to cool for 10 minutes on the pan before transferring them to a wire rack to finish cooling. Once cool, pack up and/or enjoy!

2: Offer to bring a favorite low-calorie dish to holiday parties so you can enjoy it.
3: Don’t try to lose weight during the holidays. Focus on weight maintenance.
4: Limit your intake of alcohol and other high calorie drinks such as eggnog and punch. Instead choose water, tea, or calorie-free beverages.
5: Make an effort to maintain your regular exercise program throughout the holidays.
6: Eat a small meal or snack before arriving at a holiday party. This will keep you from being overly hungry resulting in overeating.
7: Eat slowly! It takes your stomach 20 minutes to realize it is full.
8: Leave fresh fruit around the house to decrease the urge to pick on holiday sweets.
9: Make traditional holiday recipes with low-fat substitutions to decrease the calorie and fat content: substitute oil or butter with applesauce, use low-fat creams and milks, use herb to add flavor instead of fat.

Lydia Smith, DPT
Kleinpeter Physical Therapy is thrilled to welcome Lydia Smith, DPT, who joined our team in late July. Lydia brings a passion for helping others, rooted in her own life-changing experience with physical therapy as a young person.
“I chose physical therapy because I saw firsthand how it can transform lives, and I wanted to offer that same impact to others in my community,” Lydia shares. “As a clinician, I strive to truly listen to my patients and help them reach their full rehabilitation potential. I’m blessed to use my education to improve lives daily.”
Lydia earned her Doctor of Physical Therapy degree from Texas Woman’s University and holds a Bachelor of Science in Kinesiology from Louisiana State University. She is certified in Trigger Point Dry Needling (Levels 1 and 2) and is a member of the American Physical Therapy Association. Her clinical focus includes orthopedic and sports-related injuries, post-operative rehabilitation, spinal conditions, and TMJ disorders.
Outside the clinic, Lydia stays active in her community through Galilee Baptist Church and providing sports coverage for Silliman football. In her free time, she enjoys reading, traveling, trying new restaurants, playing pickleball, and cheering on her beloved LSU Tigers. She also loves barre classes and a good cup of coffee shared with family and friends.
